- 1 15 oz. can chickpeas, drained
- 1/2 bunch greens (spinach, kale, collards, etc.)
- 1 small white onion, chopped
- 1 clove garlic, chopped (optional)
- 1 tbsp lemon juice
- 1 tbsp olive oil
- salt & pepper to taste
Chop the greens. If desired, blanch greens in boiling water
for 3-5 minutes until just tender. Mix greens with chickpeas,
onion and garlic, if desired. In small bowl, whisk lemon juice,
oil, salt and pepper. Combine with salad and mix well.
